The Food Union - Grapefruit & Kaffir Lime Cocktail

A week back I test drove this cheeky cocktail recipe, while the weather was still trying to kid us it was summer with temps in the mid 20's even though it was early May.

I have to say this recipe by Trolley'd hits the spot for a refreshing drink with the perfect balance of tart grapefruit & fragrant kaffir lime. Just make sure you have enough supplies in as one cocktail is never enough.

1 grapefruit, peel removed and juice reserved
150g white sugar
300ml just boiled water
5 kaffir lime leaves

30ml grapefruit & kaffir lime syrup
30ml good-quality rum
60ml grapefruit juice
Ice, for shaking
extra grapefruit peel & kaffir lime leaves for garnish


Serves: 1 


To make the syrup - To make the kaffir lime & grapefruit syrup, combine grapefruit peel with white sugar, muddle to release the oils and set aside for 1 hour to allow flavours to infuse.

Add kaffir lime leaves to just-boiled water to make a tisane and set aside to infuse for 1 hour.

Combine kaffir lime tisane with infused sugar, then strain through a fine sieve and funnel into a sterilised bottle. Kaffir lime and grapefruit syrup will keep refrigerated for 1 week.

To make the cocktail - Add grapefruit & kaffir lime syrup to a cocktail shaker with rum and grapefruit juice, top with ice and shake until cold and combined. Strain into chilled cocktail glass and serve garnished with kaffir lime leaf and grapefruit peel.
