Getting in the mood for Christmas...?

Apologies to everyone out there in blog land - it’s been an absolute eon between posts. Been a bit busy on the work front with back to back projects, and have only just come up for air in the last week or so.

I also wanted to introduce you to fellow foodie Jen Pomeroy from the Modern Mess (www.themodernmess.com). We’ve decided to team up on a few projects and this is the first of our endeavours.

To get everyone in the mood for Christmas, Jen has cooked up a yum Christmas Mince Slice. Yes I know it’s still November, but Christmas is officially one month away!

This is a version of Jen’s grandmother’s recipe. It’s subtly Christmasy and loved by all who get to sample it, plus great to have in the pantry for those Christmas visitors.

NEDDY’S CHRISTMAS MINCE SLICE  

Recipe by Jen Pomeroy - The Modern Mess

 

INGREDIENTS

Base
100 g butter, chilled
¼ cup brown sugar
½ cup flour
¼ cup of each oats, almond meal & fine coconut 

Topping
1 cup brown sugar (not packed – 100g) 
¼ cup flour

¼ cup almond meal

½ tsp baking powder

½ tsp salt

¼ tsp mixed spice and cinnamon

1 cup fine coconut

2 large eggs

1 tsp vanilla extract

1 cup fruit mince – homemade is best! 

Serves: 6

METHOD

Base
In a food processor pulse the chilled butter with the flour, oats, almond meal and coconut sugar, until breadcrumb consistency. Press into lined slice tin (20 x 30 cm or you can use a small square one, the slice will just be thicker). Bake at 160°C for 10 - 12 mins.

Topping
Sift all the dry ingredients into a large bowl, mix well and add wet ingredients. Pour over the cooked base and spread out evenly. Cook for a further 25 - 30 mins or until the topping is set and golden. 
Cool before slicing, and dust with icing sugar. 

 Great with a cup of tea & freezes well.
